A Delicious Way To Start Your Day: Breakfast Mini Quiche Recipe

When you think of quiches you probably think of those pie-like things that you have for lunch or maybe appetizers before a meal, but probably not a food for the morning, however, you are very wrong. The mini quiche, with all of the eggy goodness, is actually the perfect thing to have in the morning and they are surprisingly easy to make.

The best part about them is that you can freeze them and heat them up in the morning for a quick, but filling, on-the-go breakfast. No more hungry mornings because you need to rush for work, what’s better?

Impress your significant other or friends with these easy to make and incredibly tasty morning delights.

Ingredients
1 onion
4 eggs
A handful of spinach
6 slices of bacon
A handful of grated cheese of your choice
20g self-raising flour (or plain flour with baking soda)
35ml of milk
Salt and pepper to taste
You can add other things like bell peppers or other vegetables as well

Method
1. Stick the bacon on to cook so it has time to cool before you need to chop it. Chop the onion and put it in the pan until they’re soft and translucent. While those are cooking combine the eggs, milk and salt and pepper and whisk until smooth. (You don’t really need a whisk here, a fork is totally fine and does the job.) Then add the flour to the egg mixture and whisk until smooth again. When it cooks the flour will coat the outside of the quiches and create a thin crust.

2. Grate your cheese if need be and roughly chop the handful of spinach. Depending how much spinach you like you can make it a small or fairly large amount relative to the rest of the quiche. When the bacon is done and cooled chop it into small bits, then add the bacon, onion, cheese and spinach evenly among the six cups (I just use a cupcake tray, but you could use a muffin tray or anything similar that you might have).

3. Add the egg mixture last and fill just below the top, then pop them in the oven at 200°c/400°f for 20-30 minutes. Don’t open the oven before the 20-minute mark because the quiches will collapse and not be able to rise again. When done, just run your knife along the outside of the quiches to loosen them before taking them out.
